Easy Recipes: Stuffed Bell Peppers

These days, I am all about simplifying everything that I do— from my daytime routine, to cooking. While I enjoy making wonderful (and elaborate) dishes from scratch, I have to be realistic with myself (and my time) and resort to making more ‘simpler’ meals.

Because so many of you have asked— I am excited to share one of my favorite homemade meals: Stuffed Bell Peppers. It is so easy to make and really doesn’t take much time to prep.

What you’ll need:

  • Ground beef
  • Green Pepper (1 per person)
  • Egg (1 per bell pepper) — optional
  • Mozzarella cheese (shredded)

What you’ll need to do:

  • Cut the top of the bell pepper
  • Pre-heat oven to 400 degrees
  • Place green pepper over aluminum foil on a baking tray
  • Crack an egg inside the bell pepper (this is optional. You can do without the egg)
  • Place tray inside oven with the bell pepper + cracked egg for 10 minutes
  • Once cooked, remove tray and stuff green pepper with cooked picadillo (ground beef). Scroll down for my Picadillo recipe
  • Place shredded mozzarella cheese over ground beef and insert back into oven
  • Broil for about 2-3 minutes (until cheese is nice and golden)
  • Serve with sweet plantains + rice as a side

PICADILLO | RECIPE

  • Marinade ground beef with Badia Mojo Marinade the day before in tupperware
  • Mince less than half of an onion and 2 cloves of garlic. Mix with ground beef
  • Chop red skin potatoes and mix with ground beef (optional)
  • Place tupperware in fridge until next day
  • Add a little bit of olive oil to pan and place ground beef inside | cook on medium heat for about 15 minutes while continuously stirring
  • Add 1 bottle of Coronita beer (the small one)
  • Add garlic + onion powder to taste
  • Add black pepper to taste
  • Add 3 tablespoons of tomato sauce
  • Mix all together in frying pan and cover with lid | leave simmering on low heat
